Brownie Recipe

On Mama's blog she posted her brownie recipe. My recipe won 2nd Place at our church Brownie Bake-off













and Reserve Champion at the country fair.












Andie's Mint Brownies


4oz baker's chocolate, coarsely chopped
1 cup butter, softened
2 cups sugar
4 eggs
1 cup all-purpose flour
1 tsp vanilla extract
1 ½ cups Andes mints baking chips
Microwave baker's chocolate in microwave-safe bowl at MEDIUM (50 % power)1 ½ Min., stirring at 30 Sec. intervals until melted. Stir smooth.
Beat butter and sugar at MEDIUM speed with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating just until blended. Add melted chocolate, beating just until blended. Add flour, beating at low speed just until blended. Stir in vanilla and Andes mints. Line 9x13 pan with foil. Spray with cooking spray.
Spread batter in pan. Bake at 350 for 35-40 Min. or until center is set. Cool completely.

MMMMM this sounds so yummy! I wonder if I could chop up Andi's candies? Or even layer them on top... hmmmm :) Thanks for sharing all the recipes!

Hey, The Ewe here...the "Andie's Mint" is a play on Andes and Andie's...get it? LOL It a reference to the part in the old Cheaper by the Dozen where Anne laments, "it's always, 'Andie button me, Andie unbutton me'" Did you ever see that, LA? Our gal here has been known to answer to "Andie." :-)
